
It’s not every day you grill a delicacy like oysters. Surprise guests with a cheesy, salty treat from the sea. These char-grilled oysters will change the way guests think about a backyard cookout.

Ingredients
1 cup (2 sticks) unsalted butter, cut into pieces
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh flat-leaf parsley
1/4 cup garlic, roasted and mashed
2 dozen large oysters, shucked
1 1/2 cups grated Romano cheese
4 lemon wedges
Directions
- Mix the butter, lemon juice, parsley, and mashed roasted garlic together in a saucepan over medium heat until butter begins to brown. This will take about five minutes.
- Fire up the grill to 375°F and lightly brush oil over the grates to keep the oysters from getting stuck.
- Set the oysters directly on the grates and lay one tablespoon of cheese on each. Heat oysters on the grill until the cheese is melted, about 8 to 10 minutes.
- Carefully remove the oysters and place them on a heat-proof tray or pan. Serve hot and pair with garlic butter sauce and lemon wedges for squeezing.
Pro tip: Freeze the oysters for about 20 minutes before shucking to numb the muscles and make shucking easier.
