Recipe: Grilled Garlic Butter Oysters

It’s not every day you grill a delicacy like oysters. Surprise guests with a cheesy, salty treat from the sea. These char-grilled oysters will change the way guests think about a backyard cookout.

Ingredients

1 cup (2 sticks) unsalted butter, cut into pieces
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh flat-leaf parsley
1/4 cup garlic, roasted and mashed
2 dozen large oysters, shucked
1 1/2 cups grated Romano cheese
4 lemon wedges

Directions

  1. Mix the butter, lemon juice, parsley, and mashed roasted garlic together in a saucepan over medium heat until butter begins to brown. This will take about five minutes.
  2. Fire up the grill to 375°F and lightly brush oil over the grates to keep the oysters from getting stuck.
  3. Set the oysters directly on the grates and lay one tablespoon of cheese on each. Heat oysters on the grill until the cheese is melted, about 8 to 10 minutes.
  4. Carefully remove the oysters and place them on a heat-proof tray or pan. Serve hot and pair with garlic butter sauce and lemon wedges for squeezing.

Pro tip: Freeze the oysters for about 20 minutes before shucking to numb the muscles and make shucking easier.
